1 pound lean ground beef, turkey or chicken
½ cup chopped onion
½ cup pearl barley
1 28-ounce can diced tomatoes, undrained
1 cup water
2 teaspoons chili powder
Pinch of salt
1 15-ounce can pinto beans, undrained
1 15-ounce can red kidney beans, undrained
¼ cup reduced-fat cheddar cheese (garnish)
- Heat ground meat and onion in a saucepan on medium heat until the meat is cooked through.
- Drain the grease.
- Add barley, tomatoes, water, chili powder and salt; cook for 30 minutes over low heat.
- Add pinto and kidney beans; cook an additional 15-20 minutes until the beans are heated through.
- Top with cheese.
*Slow cooker recipe: Cook meat and onions on the stove first; drain the grease. Add cooked meat, onions and all remaining ingredients (decreasing the water amount to ¾ cup) to slow cooker. Cook on high 3-4 hours or on low 6-8 hours.
