1 small garlic clove, minced
3 large ripe tomatoes, peeled and seeds removed, chopped
1-2 hot chili peppers (i.e., jalapeno), finely chopped
2 to 3 Tbsp minced cilantro
1-1/2 to 2 Tbsp lime juice
Dash of salt and pepper to taste
Makes 2 cups
- Put chopped onion and garlic in a strainer
- pour 2 cups boiling water over them and let drain thoroughly.
- Discard water.
- Combine onions and garlic with chopped tomatoes, peppers, cilantro, lime juice, salt, and pepper.
- Refrigerate 2-4 hours to blend flavors. Makes about 2 cups.
Note: You can bulk up this salsa more by adding corn, black beans and green/red/yellow/orange peppers. Increase the amount of spice to compensate.
