Grilled Parmesan Cauliflower
(Four to six servings)
1 head cauliflower
3 tablespoons olive oil
½ teaspoon Mrs. Dash table blend
½ teaspoon garlic powder
1 pinch ground black pepper
1 pinch sea salt
3 tablespoons grated parmesan cheese
-Wash and remove stem and leaves from cauliflower. Pat dry with a paper towel.
-Slice the cauliflower into four equal sections. Place on a baking sheet.
-In a small bowl combine olive oil, Mrs. Dash, garlic powder, sea salt and pepper. Mix well. Brush lightly on cauliflower and sprinkle with grated cheese.
-Place cauliflower on grill and lightly sear over medium heat (about 5 minutes). Lower heat or move to a cooler section of the grill and continue cooking for an additional 30 to 40 minutes or until desired tenderness (test with toothpick or fork). Serve.
-Alternative cooking method: Wrap cauliflower in heavy duty aluminum foil before placing on grill.
