Gluten-Free Banana Bread
(makes 3 mini-loaves or about 6 large muffins)
3 very ripe bananas
¼ cup melted butter
1 cup sugar
2 cups flour blend (1 cup brown rice flour, ½ cup tapioca flour, ½ cup sorghum flour)
1 tsp. baking soda
1 tsp. xanthan gum
- Mash bananas with fork.
- Add egg and butter.
- Mix well and set aside.
- Blend sugar, flour, baking soda and xanthan gum.
- Slowly add dry ingredients to wet.
- Mix until all is moist.
- Bake at 350 degrees for 50 to 60 minutes or until toothpick comes out clean.
