Gluten-Free Banana Bread

(makes 3 mini-loaves or about 6 large muffins)

3 very ripe bananas

1 egg

¼ cup melted butter

1 cup sugar

2 cups flour blend (1 cup brown rice flour, ½ cup tapioca flour, ½ cup sorghum flour)

1 tsp. baking soda

1 tsp. xanthan gum

Directions:

  • Mash bananas with fork. 
  • Add egg and butter. 
  • Mix well and set aside.
  • Blend sugar, flour, baking soda and xanthan gum. 
  • Slowly add dry ingredients to wet. 
  • Mix until all is moist.
  • Bake at 350 degrees for 50 to 60 minutes or until toothpick comes out clean.
