Fresh Bulgur Salad
¾ cup bulgur
2 cups boiling water
½ cup red onion, chopped
½ cup green onion, sliced
Pinch of salt
½ teaspoon allspice
1 cucumber, seeded and diced (unpeeled)
2 medium tomatoes, seeded and diced
½ cup fresh basil, minced
¼ cup fresh mint, minced
¼ cup lemon juice
- Combine bulgur and boiling water in a bowl.
- Cover and let soak for 1 hour until most of the water is absorbed.
- Add remaining ingredients and chill for 1-2 hours before serving
