Minty Watermelon Salad
4 cups seeded, peeled watermelon cut into 1/2-inch cubes
1/2 cup diced red onion
4 Tbsp. rice vinegar (not seasoned)
2 Tbsp. chopped fresh mint
1/2 tsp. pepper
- Combine all ingredients in a large bowl\
- Serve immediately.
Tip:You can make variations of this perky salad by substituting honeydew or cantaloupe for the watermelon, tarragon or basil for the mint, or raspberry vinegar for the rice vinegar. Or mix 2-3 types of melon for a more colorful dish.
