Cabbage and Green Apple Slaw
4 cups store-bought cabbage slaw mix
1 large tart green apple
Sweet and sour dressing:
1/4 cup cider vinegar
1/4 cup apple juice concentrate
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. celery seed
Pepper
Directions:
Put slaw mix in a large bowl. Set the apple on end and slice the flesh away from the core. Cut the apple, unpeeled, into neat matchstick-sized pieces. Add to cabbage.
Combine dressing ingredients in a small saucepan. Bring to a boil over moderate heat, then pour over cabbage mixture. Toss to coat. Season to taste with pepper.
